Creamy and with a taste of the sea, this dish of mussels in garlic butter sauce is heart warming and rich. It goes perfectly with toasted bread and glass of wine. Depending on what you serve it with, it could be a starter but also does perfectly well as a main dish.
Mussels taste like the sea
Mussels are a great ingredient for a sumptuous meal; it is surprisingly affordable, sustainable and a good source of protein. They are usually readily available in the supermarkets or local markets, and could be fresh or cooked and vacuum sealed. If you are using fresh mussels, be sure to clean them properly.
Preparing the vegetables
In a large pot, add the olive oil over a medium heat. Once warm, add the butter and stir gently till it’s melted.
Next, add the garlic and stir for about 1-2 minutes before adding the diced onions. Stir for another 3-5 minutes to allow the onions to start getting soft.
Now add the diced capsicums and mix well. Allow these vegetables to cook for about 5-7 minutes. Add a pinch of salt but not too much at this point. For this dish, we will only adjust for taste at the end after the mussels have been added.
Throwing in the mussels
Once the vegetables are soft, add the mussels and water and bring to a simmer. (If preferred, instead of water, you can add a splash of white wine). Put on the lid and allow mussels to simmer over low heat for 5 mins.
Add the cream and stir well while bringing to boil. At this point, add a little more salt and pepper to taste.
These mussels in the garlic butter cream sauce are now perfectly cooked and ready to enjoyed.
Garnish with parsley and serve this with some toasted bread to mop up all the delicious sauce!
Mussels in Garlic-Butter cream sauce with Capsicums
Ingredients
- 500 g mussels (fresh or cooked are fine)
- 4 cloves garlic (minced)
- 1 red capsicum (diced)
- 1 yellow capsicum (diced)
- 1 medium onion (diced)
- 100 g butter
- 1 cup cream
- 1 tbsp olive oil
- 1/2 cup water
- salt and pepper (to taste)
