A vegetable stir fry with meat is a staple at Chinese meals, and there is no one particular vegetable that you have to use. You could use anything from Bok Choy, Kailan to Broccoli, and also throw in some sliced capsicums or carrots to brighten up the dish. A little bit of meat, e.g. sliced pork or chicken, is usually added to enhance the depth and flavour of the dish.
In this recipe, we use left over stewed pork belly (simply divine and a must try!) with Bok Choy. The sweetness of the Bok Choy is complimented by the savoury soya sauce pork belly, creating a deep flavour profile. It is best eaten with rice and other side dishes.
What is Bok Choy?
Bok Choy, which means ‘White Vegetable’ when literally translated, is a type of Chinese cabbage that is popular in both China and South East Asia. It has a mild flavour profile, and depending on the variety, can be mildly sweet and juicy. The leaves tend to cook faster than that stems, and also have a stronger flavour.
Bok Choy is also nutrient dense, and contains many essential vitamins, anti-oxidants and minerals.
Bringing the stir-fry together
Begin by chopping the Bok Choy into smaller pieces and wash with cold water. Pay attention to the base as there is sometimes some dirt or mud trapped there. Feel free to use other leafy vegetables such as kai lan, nai bai or even cabbage as substitutes.
In a pan, add 1 table spoon of oil and heat over medium-high heat. When the pan is hot, add in your washed veggies. Be careful of any oil splatter and the vegetables are likely to sizzle loudly.
After frying for 1-2 minutes, ladle in the left over pork belly and allow veggies to cook for another 3-5 minutes. Cover the pan with a lid while cooking if you prefer your vegetables softer.
Serve with rice, and enjoy!
Bok Choy Stir-Fry with Pork
Ingredients
- 4 bok choy
- 1 tbsp olive oil
- 1/2 cup braised pork belly (feel free to substitute with other braised meat)
Instructions
- Slice the base of each bok choy and discard. Chop the remaining boy choy into smaller pieces and wash in running water to remove any dirt/ mud.
- In a pan, add 1 tablespoon on oil and leave over medium/high heat. When the pan starts to get hot, add the washed bok choy and stir-fry the veggies. Allow it to sizzle for 1-2 minutes.
- Ladle in the braised pork belly and cook well over high heat for another 3-5 minutes. You can add a lid while cooking if you prefer you veggies to be softer.
- Serve with rice and other dishes, enjoy!
