Slice the base of each bok choy and discard. Chop the remaining boy choy into smaller pieces and wash in running water to remove any dirt/ mud.
In a pan, add 1 tablespoon on oil and leave over medium/high heat. When the pan starts to get hot, add the washed bok choy and stir-fry the veggies. Allow it to sizzle for 1-2 minutes.
Ladle in the braised pork belly and cook well over high heat for another 3-5 minutes. You can add a lid while cooking if you prefer you veggies to be softer.
Serve with rice and other dishes, enjoy!
