Figuring out what to do with ripe bananas, or simply love having them as a snack?
This banana oat cookies with peanut butter recipe is perfect for you – they are great for breakfast or simply as a midday snack. Oatmeal is a complex carbohydrate which allows the slow release of energy and will keep you fuelled for quite some time.
Preparing the banana oat ‘cookie’ mix
Begin by preheating the oven to 180D/ 325F.
In a large mixing bowl, add the chopped banana and mash them with a fork till they are a paste.
Next, add the oats, peanut butter and olive oil to the mashed bananas and mix well until combined. Depending on how ripe the bananas were, you may find the mix a little dry. Feel free to add 1 more tbsp of extra virgin olive oil.
On a baking tray, spoon one scoop of the mixture and flatten lightly. Repeat until the mixture is used up. This should yield 5-8 ‘cookies’ depending on the size.
Pop them into the oven and bake for 15 minutes.
Serve warm and enjoy!
