In a large mixing bowl, add the chopped banana and mash them with a fork.
Add the oats, peanut butter and olive oil to the mashed bananas and mix well until combined.
On a baking tray, spoon one scoop of the mixture and flatten lightly. Repeat until all the mixture is used up. This should yield 5-8 'cookies' depending on how the size.
Bake for 15 minutes.
Serve warm and enjoy!
