Millet Porridge/ Congee (小米粥)

Millet porridge or congee (小米粥) is a popular side dish in Chinese cooking and can be served at all meals as a side. It is warm, nourishing, and simple to digest, making it a staple at the dining table. Millet is an ancient whole grain and comes packed with a variety of vitamins and minerals.

Boiling the millet congee (小米粥)

Begin by rinsing the millet a couple of times to remove any impurities and set aside. In a large pot, add the water and bring to boil. Your pot should only be no more than two thirds full to provide some allowance and ensure that it doesn’t boil over while cooking.

Once the water starts to boil, add the millet and stir a few times. Wait for it to boil again and reduce to low fire. Use a ladle to skim off the the foam to reduce the chances of boiling over.

Now, boil the millet for another 30 mins on a small fire and stir occasionally to prevent any from sticking to the bottom. If you prefer your millet porridge to be thicker, boil for an additional 10 minutes.

Lastly, add a handful of goji berries and enjoy!

Millet Porridge (小米粥)

Ingredients

  • 100 g millet
  • 2 l water
  • 1 handful goji berries (optional)

Instructions

  • Rinse millet a couple of times and drain.
  • Add the water to a big pot and bring to boil.
  • Once the water is boiling, add the millet and stir a few times and bring to boil again.
  • Once boiling, reduce to a low fire to ensure that the millet doesn't boil over.
  • Boil the millet for approximately 30 mins and stir occasionally to ensure that it doesn't stick to the bottom of the pot.
  • If you prefer a thicker consistency, boil for an additional 10 minutes to reduce.
  • Add a handful of goji berries if you prefer, and serve warm!
