Although Kimchi Fried Rice only needs a few simple ingredients, it is really tasty and a staple in Korean cuisine. Over here, we’ve enhanced the flavour by adding bacon, which really takes this dish to the next level! Savoury, spicy with bits of bacon in each bite, it is so delicious you are going to want a second helping!
Preparing the ingredients
Prepare all your ingredients and ensure they are within reach before you begin.
Begin by chopping the bacon into small pieces and chopping the garlic cloves finely. Using a wide pan, heat up 1 tbsp of olive oil over a medium fire. When the pan is hot, add in the bacon and allow for it to sizzle and brown.
In the same pan, push the bacon to one side and add 1 more tbsp of olive oil. Add the garlic and fry separately for a moment to let the garlic brown.
Once the garlic starts to brown, add in the chopped kimchi and kimchi brine. Mix well with bacon and garlic and fry over high heat for about a minute.
Adding in the sesame oil and rice
Now, gently create a space in the middle of the pan, and add the 2 tbsp of sesame oil. Once it is hot, add in the rice and mix well.
Fry over high heat till kimchi fried rice is glistening but not too wet for about 3 minutes. If you are using freshly cooked rice, as compared to overnight rice, you will have to fry it for longer to dry it out slightly.
Lastly, garnish with some shredded seaweed, top it off with a fried egg and you are all ready to tuck in.
Serve with more kimchi on the side if you like, and enjoy!
