Prepare all your ingredients and ensure they are within reach before you begin.
Begin by chopping the bacon into small pieces and finely chop the 2 cloves of garlic.
Using a pan, heat up 1 tbsp of olive oil over a medium fire. When the pan is hot, add in the bacon and allow for it to sizzle till it browns at the edges.
In the same pan, push the bacon to the side and add 1 more tbsp of garlic to the side. Add the garlic and fry separately for a moment to let the garlic brown.
Once garlic is starting to brown, add in the kimchi and brine gently and mix well with bacon and garlic.
Gently create a space in the middle of the pan, and add the 2 tbsp of sesame oil. Once it is hot, add in the rice and mix everything together well.
Fry over high heat till kimchi fried rice is glistening but slightly dry. If you are using freshly cooked rice, as compared to overnight rice, you will have to fry it for longer to ensure the kimchi fried rice is not too wet.
Dish out the kimchi fried rice onto a plate and garnish with some seaweed.
Now, using the same pan, crack a raw egg to fry a sunny side up.
Serve warm and enjoy!
